We've resisted putting biryani on the menu for five years, because it's such a complex dish that needs care and a recipe crafted with love and pedigree. We marinate the paneer first in turmeric, salt, chilli and homemade garam masala. We then gently fry it in butter before mixing it with a classic spiced tomato sauce. About as Delhi as it gets. But to mix things up, and to make things a little lighter, it’s served with red rice and a cooling kachumber salad.
